WHOLESOME CARROT CAKE THAT’S ACTUALLY GOOD FOR YOU!

Ingredients :

  • Cake:
    • 2 cups whole wheat pastry flour
    • 2 cups finely grated carrots
    • 1/2 cup maple syrup
    • 1/3 cup coconut oil
    • 3 eggs
    • 1/2 cup unsweetened applesauce
    • 1 tsp vanilla
    • 2 tsp cinnamon
    • 1/2 tsp nutmeg
    • 1/2 cup chopped walnuts
    • 1/2 cup raisins
    • 2 tsp baking powder
    • 1/2 tsp salt
    Greek Yogurt Frosting:
    • 2 cups Greek yogurt
    • 3 tbsp honey
    • 1 tsp vanilla
    • Zest of 1 lemon

Instructions : 

  1. 1. Mix wet ingredients
    2. Combine dry ingredients separately
    3. Fold wet into dry, add carrots & nuts
    4. Bake at 350°F for 35-40 mins
    5. Cool completely before frosting
    Pro Tip: Strain yogurt overnight for thicker frosting!
