Ingredients :
- 1 pound ground beef
- 1 package taco seasoning mix
- 1 box jumbo pasta shells
- 1 can black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Non-stick cooking spray
Instructions :
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick cooking spray.
- Cook Pasta Shells: Cook the jumbo pasta shells according to the package instructions. Drain and set aside.
- Prepare Ground Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
- Season Beef: Add the taco seasoning mix to the ground beef. Stir in the black beans, corn, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and let cool slightly.
- Prepare Cheese Mixture: In a bowl, mix together shredded cheddar cheese, sour cream, chopped cilantro, and green onions.
- Stuff Shells: Fill each cooked pasta shell with the ground beef mixture. Place the stuffed shells in the prepared baking dish.
- Top with Cheese Mixture: Spoon the cheese and sour cream mixture over the stuffed shells, spreading it evenly.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve: Serve hot, garnished with diced tomatoes, sliced jalapeños, or chopped avocado if desired.
