Taco Soup Recipe

Ingredients :

    • 1 lb ground beef
    • 1 small onion, chopped
    • 1 can (10 oz) Rotel Tomatoes and Green Chilies, undrained
    • 4 oz cream cheese, cut into cubes
    • 1 1/2 cups chicken broth or vegetable broth
    • 1 teaspoon garlic powder
    • 1 packet taco seasoning
    • Optional toppings: shredded cheddar cheese, sour cream

Instructions : 

    1. Brown the beef: In a large pot or Dutch oven, brown the ground beef and onion over medium heat. Drain off any excess grease.
    2. Combine ingredients: Return the beef and onion to the pot. Stir in the Rotel tomatoes, cream cheese, chicken broth, garlic powder, and taco seasoning.
    3. Simmer: Bring the soup to a simmer over medium heat, stirring occasionally until the cream cheese is melted and the flavors are combined. This should take about 15-20 minutes.
    4. Serve: Ladle the soup into bowls and top with shredded cheddar cheese and sour cream, if desired.

      Tips:

      • For a spicier soup, add a diced jalapeño or serrano pepper to the pot with the onion.
      • You can add other vegetables to the soup, such as corn, black beans, or diced bell peppers.
      • To make this soup ahead of time, you can simmer it for a longer period and then refrigerate it. Reheat gently on the stovetop or in the microwave before serving.
