SUNSHINE LEMON CREAM CHEESE SQUARES

Ingredients :

  • 2 (8 oz.) packages cream cheese, at room temperature
  • 2 (8 oz.) packages refrigerated crescent roll dough, divided
  • 1 large lemon, zested and juiced, divided
  • 1/2 cup sugar, plus 3 tablespoons, divided
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions :

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with butter or non-stick spray, ensuring even coverage.
  2. Unroll one can of crescent roll dough and carefully place it in the greased baking dish, ensuring it covers the bottom completely.
  3. Gently pinch the seams together to seal and press the dough into the edges of the dish to create a solid bottom crust.
  4. In a large bowl or using a mixer, beat the cream cheese until fluffy, approximately 1-2 minutes. Add in 1/2 cup of sugar, all of the lemon juice, 3/4 of the lemon zest, and the vanilla extract, mixing until the mixture is smooth and well combined.
  5. Pour the creamy lemon mixture over the bottom crust in the baking dish, spreading it out evenly with a spatula.
  6. Unroll the remaining crescent roll dough and carefully place it over the lemon cream cheese filling, ensuring it covers the filling completely. Pinch the seams together again and gently stretch the dough to reach the edges of the baking dish.
  7. In a small bowl, whisk together the melted butter with 3 tablespoons of sugar and the remaining lemon zest.
  8. Brush the melted butter mixture evenly over the top layer of dough until it is fully coated.
  9. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and cooked through.
  10. Once baked to perfection, remove the dish from the oven and allow it to cool for at least 20 minutes before slicing into squares and serving.
