Ingredients:
1 (14 3/4 ounce) canned salmon
1/4 cup onion, finely chopped
1/4 cup cornmeal
1/4 cup flour
1 egg
3 tablespoons mayonnaise
Instructions:
Open salmon and drain thoroughly. Place drained salmon in a mixing bowl and flake evenly with a fork. * Add chopped onion, cornmeal, flour, egg, and mayonnaise. Stir until well blended.
Shape the mixture into patties about the size of an average burger or slightly smaller.
Heat oil in a skillet over medium heat. * Carefully place the patties in the hot oil and fry until browned on each side, turning once while frying.
Once browned and crispy, remove the patties from the skillet and drain on paper towels. * Serve hot and enjoy the Southern goodness of our Fried Salmon Patties!
