Prepare the Dough:
- Combine sour cream, sugar, and yeast in a small bowl. Mix until combined and set aside.
- In a large bowl, cut in the cold butter into the flour until the mixture resembles coarse crumbs.
- Add the sour cream mixture, egg yolks, and vanilla to the flour mixture. Mix until a dough forms.
- Divide the dough into 5 equal portions, wrap each in plastic wrap, and refrigerate for at least 8 hours or overnight.
Roll Out and Fill:
- Roll out each dough portion on a sugar-dusted surface to 1/8-1/4 inch thickness.
- Cut the dough into squares.
- Place a thin line of filling diagonally on each square.
- Fold the dough over the filling and pinch the edges to seal.
Bake:
- Place the kolaches on an ungreased baking sheet.
- Bake in a preheated 350°F (175°C) oven for 15-18 minutes, or until golden brown.
- Let cool on the baking sheet before transferring to a wire rack to cool completely.
- Finish:
- Dust the cooled kolaches with powdered sugar.
- Store in an airtight container or paper bag for a few days.
