Rolled crispy pastries

Ingredients:

For the Pastry:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1/4 cup ice water (plus more if needed)

For the Filling (Choose one or mix and match):

  1. Savory  Cheese and Herb Filling:
    • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
    • 1/4 cup finely chopped fresh herbs (parsley, thyme, rosemary)
    • Salt and pepper to taste
  2. Vegetable Filling:
    • 1 cup finely chopped vegetables (carrots, bell peppers, spinach)
    • 1/2 cup crumbled feta or goat cheese
    • 1 teaspoon olive oil
    • Salt and pepper to taste
  3. Sweet Nut Filling:
    • 1/2 cup finely chopped nuts (walnuts, almonds, pecans)
    • 1/4 cup brown sugar
    • 1 teaspoon cinnamon
    • 2 tablespoons melted butter
  4.  Chocolate Filling:
    • 1/2 cup chocolate chips or finely chopped chocolate
    • 1 tablespoon sugar
    • 1 tablespoon butter

For the Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon water

Instructions:

  1. Prepare the Pastry Dough:
    1. In a large mixing bowl, combine the flour and salt.
    2. Add the chilled butter pieces and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
    3. Gradually add the ice water, mixing until the dough begins to come together. Add more water, a tablespoon at a time, if necessary.
    4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    1. Choose your desired filling from the options above.
    2. For the savory fillings, mix the ingredients together in a bowl and season with salt and pepper.
    3. For the sweet fillings, combine the ingredients thoroughly in a bowl.
  3. Assemble the Pastries:
    1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    2. On a lightly floured surface, roll out the chilled dough into a large rectangle, about 1/8 inch thick.
    3. Spread the filling evenly over the dough, leaving a small border around the edges.
    4. Starting from one long side, carefully roll the dough into a tight log.
    5. Cut the log into 1-inch pieces and place them, seam side down, on the prepared baking sheet.
  4. Bake the Pastries:
    1. Brush the tops of the pastries with the beaten egg wash.
    2. Bake in the preheated oven for 15-20 minutes, or until the pastries are golden brown and crispy.
    3. Allow the pastries to cool slightly before serving.
