Ingredients:

  • 6 cups powdered sugar, plus additional as needed
  • 1/2 cup russet potato, mashed and cooled (approximately 1 large potato)
  • 1/3 cup creamy peanut butter
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions:

  1. In a large bowl, combine the mashed potato, milk, vanilla extract, and salt. Use an electric mixer set to medium speed to beat the mixture for about 2 minutes, until well combined.
  2. Gradually add the powdered sugar to the potato mixture, about 1 cup at a time, stirring well after each addition. Continue adding powdered sugar until a thick dough forms. If the dough seems too sticky, you can add more powdered sugar, 1 tablespoon at a time, until it reaches the desired consistency. The dough should be thick and slightly thicker than cookie dough.
  3. Shape the dough into a ball and dust it lightly with powdered sugar. Place a sheet of wax or parchment paper on a flat surface, then roll out the dough into a rectangle that is approximately 1/8 inch thick and measures about 10×12 inches. Trim any uneven edges with a knife.
  4. Sprinkle a generous amount of powdered sugar over the surface of the dough. Place another sheet of parchment paper over the powdered sugar and gently flip the dough over so that the powdered sugar side is facing down. Carefully peel away the parchment paper that is now on top (the one used for rolling out the dough).
  5. Spread the creamy peanut butter evenly over the surface of the dough, leaving a small border around the edges. Starting from one long side, carefully roll the dough into a tight log, using the parchment paper to help guide you. Think of it like rolling up a jelly roll.
  6. Once rolled, wrap the log of dough tightly in parchment paper and place it in the freezer for about 1 hour to firm up.
  7. After chilling, remove the wrapped log from the freezer and unwrap it. Use a sharp knife to slice the log into rounds that are about 1/4 inch thick.
  8. Serve your homemade peanut butter potato candy slices and enjoy! Any leftovers can be stored in an airtight container in the refrigerator for later snacking.
