Oatmeal and zucchini cake with cheese

Ingredients :

  • 1 zucchini (about 200 g)
  • 1 teaspoon salt
  • 30 g (3 tablespoons) rolled oats
  • 100 g (1 cup) grated cheese (e.g. cheddar or mozzarella)
  • 2 eggs
  • Black pepper to taste
  • 2 tablespoons chopped chives (optional)

Instructions :

  1. Cut the zucchini into thin slices and sprinkle with salt.
  2. Let it sit for 10 minutes to remove excess moisture.
  3. Pat dry thoroughly with a paper towel to prevent it from getting soggy.
  4. In a bowl, combine the zucchini slices, rolled oats, grated cheese and eggs.
  5. Season with black pepper and stir well.
  6. If using, toss with chopped scallions.
  7. Preheat oven to 180°C (350°F).
  8. Grease a baking dish or line with parchment paper.
  9. Transfer mixture to dish and spread evenly.
  10. Bake for 20 minutes or until top is golden and bake is set.
  11. Allow baked good to cool slightly before slicing and serving. Enjoy warm or at room temperature.
