Journey of Sourdough Bread

Ingredients :

  • After years of denial, I am officially an UNLOAF girl! Fresh, beautifully proofed bread in one day!

    Steps:

    1. Start: 8:00 AM.

      • Ingredients: 125g starter (very active), 500g bread flour, 300g water, 10g salt.
      • Mix: Mix with hands until it forms a ball.
    2. First Fold: After 30 minutes (time for coffee), do a set of stretch and folds.

      • Bulk Fermentation: Leave covered to bulk. (Went and played 2 sets of tennis and ran to Target)
      • Note: Leave your starter jar out as a guide of when it doubles.
      • Second Fold: Do another stretch and fold and let sit 30 minutes. (Took a shower)

      • Shaping and Bulk Fermentation: Shape and let bulk for 1 hour. (Fixed and ate lunch)

      • Refrigeration: Refrigerate for as long as you need to wait. (Had a doctor’s appointment)

      • Baking:

        • Preparation: Remove from fridge, score.
        • Bake: Bake at 450°F in a cold oven/cold Dutch oven for 50 minutes.
        • Broil: Remove from DO and bake on rack for 10 more minutes.

          Result:

          Ready in time for dinner.
