  • 1/8 teaspoon red pepper flakes
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • Kosher salt
  • Freshly ground black pepper

Instructions :

  1. Begin by browning the pork sausage in a large skillet over medium-high heat. Use a spatula to break up the sausage into crumbles as it cooks.
  2. Once the sausage is browned, reduce the heat to medium-low and add the red pepper flakes and unsalted butter to the skillet. Allow the butter to melt and combine with the sausage.
  3. Sprinkle half of the all-purpose flour into the skillet, stirring continuously to incorporate it into the fat from the sausage and butter. Continue cooking until the flour is fully absorbed.
  4. Add the remaining half of the flour to the skillet and stir until it is also absorbed and well combined with the other ingredients.
  5. Slowly pour in the whole milk, whisking constantly to prevent lumps from forming. Continue whisking over medium-low heat until the gravy begins to thicken, about 10 minutes.
  6. Once the gravy has reached your desired consistency, season it generously with kosher salt and freshly ground black pepper, adjusting to taste as needed.
