- 2 lbs beef stew meat, cut into 1-inch pieces
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3 cups beef broth
- 1/4 cup Worcestershire sauce
- 2 tbsp tomato paste
- 1/4 cup flour
- 1 tsp dried thyme
- 1 tsp dried rosemary
Fresh parsley, chopped, for garnish
Instructions :
- Preparation: Season the beef with salt and pepper. Heat olive oil in a skillet over medium-high heat.
- Cooking: Sear the beef until browned on all sides, then transfer to a slow cooker. Sauté onions and garlic in the same skillet for 2-3 minutes, then add to the slow cooker.
- Combine mushrooms, beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary.
- Mix well. In a small bowl, create a slurry with flour and water, then stir it into the slow cooker. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is tender.
- Final touches: Once cooked, garnish with fresh parsley.
