INGREDIENTS :
Cake:
1 cup vegetable oil
2 cups sugar
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons vanilla extract
1 cup chopped pecans
3 cups peeled and chopped apples
Frosting:
1/2 cup butter
1 cup packed light brown sugar
1/4 cup evaporated milk
1/2 teaspoon vanilla extract
INSTRUCTIONS :
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9×13 inch baking pan.
Combine oil, sugar, and eggs in a large bowl and mix well.
Stir in flour and baking soda until just combined.
Add vanilla extract, chopped pecans, and chopped apples to the batter and fold in gently until evenly distributed.
Spread the batter evenly into the prepared baking pan.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 2 hours before frosting.
Frosting Instructions:
In a small saucepan, combine butter, brown sugar, evaporated milk, and vanilla extract.
Bring the mixture to a boil over medium heat, then reduce heat and simmer for 2 minutes.
Remove the pan from heat and place it in a bowl filled with ice water to cool slightly.
Beat the frosting until it reaches a spreading consistency.
Spread the frosting over the top of the cooled cake.
