Ingredients :
- 1 box white cake mix
- 8 oz can crushed pineapple (with juice)
- 1 cup sugar
- 8 oz package cream cheese
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 2-3 cups crushed pecans
Instructions :
- Bake the Cake:
Prepare and bake the white cake according to the package instructions.
Once baked, allow the cake to cool completely. Then, use a fork or skewer to poke holes all over the cooled cake.
Prepare the Pineapple Mixture: - In a small saucepan, combine the crushed pineapple (with its juice) and 1 cup of sugar.
Bring the mixture to a boil over medium heat, stirring occasionally. - Once boiled, remove from heat and pour the pineapple mixture evenly over the cooled cake, allowing it to soak into the holes.
- Make the Frosting:
In a large mixing bowl, combine the softened cream cheese, butter, and powdered sugar.
Beat until smooth and creamy.
Add the vanilla extract and crushed pecans, mixing until well combined.
Assemble the Cake: - Spread the cream cheese frosting evenly over the top of the cake.
