Creamy Tuscan Shrimp

Ingredients :

  • 1 lb raw shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper, to taste

Instructions : 

  1. In a large skillet, melt the butter over medium-high heat. Once the butter has melted, add the minced garlic and sauté for 1-2 minutes until the garlic becomes fragrant. This step brings out the depth of flavor in the garlic and forms the base of the sauce.
  2. Add the raw shrimp to the skillet, ensuring they are evenly spread out. Cook the shrimp for 2-3 minutes on each side, or until they turn pink and opaque. Overcooking shrimp can make them tough, so be sure to keep an eye on them. Once cooked, remove the shrimp from the skillet and set them aside.
  3. In the same skillet, add the sun-dried tomatoes and chicken broth. Stir to combine and bring the mixture to a simmer. Let it cook for 3-4 minutes, allowing the broth to reduce by half. This step infuses the broth with the rich flavors of the sun-dried tomatoes and gives the sauce a more concentrated taste.
  4. Once the chicken broth has reduced, add the heavy cream and grated Parmesan cheese to the skillet. Stir everything together, allowing the cream and cheese to melt and form a smooth sauce. The Parmesan cheese adds a tangy richness to the sauce, making it the perfect complement to the shrimp and sun-dried tomatoes.
  5. Add the fresh spinach to the skillet and stir it into the sauce. Cook for 1-2 minutes, or until the spinach wilts down. The spinach adds a fresh, slightly earthy flavor that contrasts beautifully with the richness of the sauce.
  6. Return the cooked shrimp to the skillet, stirring everything together to coat the shrimp in the creamy sauce. Season with salt and pepper to taste. You can also add a pinch of red pepper flakes for a slight kick if you prefer a bit of heat in your dish.
  7. Once the shrimp are fully coated in the creamy sauce, the dish is ready to serve. Garnish with additional Parmesan cheese and fresh herbs, such as basil or parsley, if desired. The creamy Tuscan shrimp can be served over pasta, rice, or paired with a fresh side salad.
