Creamy Alfredo Lasagna Soup

Ingredients :

• ½ lb ground sausage
• 1 small onion, chopped
• 8 oz mushrooms, sliced
• 2 cloves garlic, minced
• 4 cups baby spinach
• 5 cups low-sodium chicken broth
• 5 lasagna noodles, broken
• 1 tsp dried oregano
• ½ tsp dried basil
• 3 tbsp butter
• 3 tbsp flour
• 1 cup milk
• 1 cup Parmesan cheese, grated

Instructions :

  1. Brown sausage in a large saucepan over medium heat.
  2. Add onion and mushrooms; cook until tender.
  3. Stir in garlic and spinach; cook briefly.
  4. Pour in chicken broth, bring to a simmer for 5 minutes.
  5. Add broken noodles, oregano, and basil. Cook until noodles are tender, about 10-12 minutes.
  6. In a skillet, melt butter. Whisk in flour, then milk. Stir until thickened. Add Parmesan and whisk until smooth.
  7. Stir Alfredo sauce into the soup. Serve hot and enjoy!
