Cottage Cheese Bread

Ingredients :

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • 1 cup oat flour (or ground oats)
  • ½ cup shredded cheddar or mozzarella cheese
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp garlic powder (optional)
  • 1 tsp dried rosemary or thyme (optional)

Instructions : 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the cottage cheese and eggs until smooth.
  3. In a separate bowl, combine the oat flour, baking powder, baking soda, salt, and any optional seasonings.
    Gradually mix the dry
  4. ingredients into the wet mixture until just combined. Fold in the shredded cheese.
    Pour the batter into the prepared loaf pan, smoothing the top.
  5. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
    Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

  7. Kcal: 150 kcal per slice | Servings: 8 slices
