Ingredients :
- For the batter:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder

- 1 cup cornmeal
- 1 cup grated cheese
- 1 cup milk
- 2 eggs
- 1/4 cup vegetable oil, for frying
- For the filling:
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 carrot, grated
- 1/2 cup onion rings, cut in half
Instructions :
- Prepare the filling: In a large bowl, combine the chopped onion, chopped green pepper, grated carrot, and halved onion rings. Set aside.
- Make the batter:
- In a separate bowl, whisk together the all-purpose flour, baking powder, salt, black pepper, garlic powder, paprika, and cornmeal.
- In another bowl, whisk together the milk and eggs.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Add the grated cheese and vegetable mixture to the batter and stir until well blended. If the batter is too thick, add a little more milk.
- Fry the fritters:
- Heat about 1/4 cup of vegetable oil in a large skillet over medium heat.
- Using a cookie cutter or a spoon, drop spoonfuls of batter into the hot oil. Fry until golden brown on both sides.
- Drain on paper towels.
- Serve immediately with your favorite dipping sauce.
