Corn Fritters

Ingredients :

  • For the batter:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 cup cornmeal
  • 1 cup grated cheese
  • 1 cup milk
  • 2 eggs
  • 1/4 cup vegetable oil, for frying
  • For the filling:
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 carrot, grated
  • 1/2 cup onion rings, cut in half

Instructions : 

  1. Prepare the filling: In a large bowl, combine the chopped onion, chopped green pepper, grated carrot, and halved onion rings. Set aside.
  2. Make the batter:
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, black pepper, garlic powder, paprika, and cornmeal.
  4. In another bowl, whisk together the milk and eggs.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Add the grated cheese and vegetable mixture to the batter and stir until well blended. If the batter is too thick, add a little more milk.
  7. Fry the fritters:
  8. Heat about 1/4 cup of vegetable oil in a large skillet over medium heat.
  9. Using a cookie cutter or a spoon, drop spoonfuls of batter into the hot oil. Fry until golden brown on both sides.
  10. Drain on paper towels.
  11. Serve immediately with your favorite dipping sauce.
  12. Tips:
  13. For a crispier fritter, allow the batter to rest for about 15 minutes before frying.
  14. Experiment with different types of cheese, vegetables, and herbs to create your own unique flavor combinations.
