Coconut Lime Fish Soup

Ingredients :

  • Fish (white fish like tilapia, cod, or snapper): 500g, cut into bite-sized pieces
  • Coconut milk: 400ml (1 can)
    Fish or vegetable broth: 4 cups
    Lime juice: Juice of 2 limes (plus extra lime wedges for serving)
    Ginger: 1-inch piece, grated or minced
  • Garlic: 3 cloves, minced
    Lemongrass: 1 stalk, bruised and cut into pieces (optional but recommended)
  • Shallots: 2, sliced thinly
    Carrot: 1 medium, sliced thinly
    Cherry tomatoes: 1 cup, halved
    Fresh cilantro: A handful, chopped (for garnish)
    Chili (optional): 1-2, sliced (optional for heat)
    Olive oil: 1 tablespoon
    Salt and pepper: To taste

Instructions : 

  1. Prepare the Ingredients:
    If you’re using lemongrass, bruise it with the back of a knife and cut into a couple of pieces.
    Slice the shallots, carrots, and tomatoes. Grate or mince the ginger and garlic.
  2. Sauté Aromatics:
    In a large pot, heat the olive oil over medium heat.
    Add the shallots, garlic, ginger, and lemongrass (if using) to the pot. Sauté for 3-4 minutes until the shallots are soft and fragrant.
  3. Add Broth and Coconut Milk:
    Pour in the fish broth and coconut milk. Stir to combine and bring to a simmer.
    Simmer the Vegetables:
  4. Add the sliced carrots and tomatoes to the pot. Let the soup simmer for 5-7 minutes, until the carrots are tender.
  5. Cook the Fish:
    Add the fish pieces to the pot, stir gently, and let the soup simmer for 5-7 minutes, or until the fish is cooked through and tender.
  6. Season the Soup:
    Stir in the lime juice, and season with salt and pepper to taste. If you want some heat, add sliced chili at this stage.
  7. Serve:
    Remove the lemongrass stalks, if used.
    Ladle the soup into bowls and garnish with fresh cilantro and additional lime wedges on the side.
    Enjoy!
    Serve hot, with a side of crusty bread or over a bed of rice for a complete meal.
    Tips:
    You can add other vegetables like bell peppers or mushrooms if you like.
    For extra depth of flavor, consider adding a splash of fish sauce or a small spoonful of curry paste.
    Adjust the amount of lime juice based on how tangy you like your soup!
