Ingredients :
- 1. 1 lb boneless chicken breasts
- 2. 2 cups mixed mushrooms (button, cremini, shiitake)
- 3. 1 cup uncooked wild rice
- 4. 4 cups chicken broth
- 5. 1 large onion, chopped
- 6. 2 cloves garlic, minced
- 7. 2 carrots, peeled and chopped
- 8. 2 celery stalks, chopped
- 9. 1 tsp dried thyme
- 10. Salt and pepper, to taste
Instructions :
- 1. Cook wild rice according to package instructions.
- 2. In a large pot, sauté onion, garlic, carrots, and celery in a little oil until tender.
- 3. Add chicken, chicken broth, mushrooms, thyme, salt, and pepper.
- 4. Bring to a boil, then reduce heat and simmer until chicken is cooked through.
- 5. Shred chicken and add cooked wild rice to the pot.
- 6. Serve hot and enjoy!
