Cheesy Hamburger Potato Soup

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced
  • 4 cups beef broth
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • Fresh parsley or chives for garnish

Instructions : 

  1. In a large pot, brown the ground beef over medium heat until fully cooked, breaking it apart as it cooks. Drain any excess fat and set the beef aside.
  2. In the same pot, melt the butter and add the diced onion and minced garlic. Cook for 3-4 minutes until the onion is softened and fragrant.
  3. Add the diced potatoes, garlic powder, onion powder, and beef broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. In a small bowl, whisk together the milk and flour to create a slurry. Gradually stir it into the soup and cook for another 5 minutes to thicken. Stir in the shredded cheddar cheese and sour cream, mixing until the cheese is melted and the soup is creamy.
  5. Return the cooked ground beef to the pot and stir everything together. Season with salt and pepper to taste. Let the soup simmer for a few more minutes to allow the flavors to meld together.
  6. Ladle the cheesy hamburger potato soup into bowls and garnish with fresh parsley or chives for a pop of color. Serve with crusty bread for the ultimate comfort meal!
