INGREDIENTS :
For the Salad:
⏺ 2 medium heads of broccoli (about 1 lb), cut into small florets
⏺ 1 large carrot, grated or julienned
⏺ 1 apple, cored and chopped
⏺ ¼ cup red onion, finely chopped
⏺ ½ cup dried cranberries or raisins (optional)
⏺ ½ cup nuts (walnuts, pecans, or almonds), toasted and chopped (optional)
For the Creamy Lemon Dressing:
⏺ ⅓ cup mayonnaise
⏺ ¼ cup plain yogurt or sour cream
⏺ 2 tablespoons lemon juice
⏺ 1 teaspoon lemon zest
⏺ 1 tablespoon honey or maple syrup
⏺ Salt and pepper, to taste
INSTRUCTIONS :
1️⃣ Wash the broccoli, carrot, and apple.
2️⃣ Cut the broccoli into small florets, grate or julienne the carrot, and chop the apple into bite-sized pieces.
3️⃣ In a large salad bowl, combine the broccoli, carrot, and chopped apple.
4️⃣ Add in the optional ingredients (finely chopped red onion, dried cranberries or raisins, and toasted chopped nuts) if using.
5️⃣ In a separate small bowl, whisk together the mayonnaise, yogurt (or sour cream), lemon juice, lemon zest, and honey. Season with salt and pepper to taste. You can adjust the dressing based on your preference for more lemon juice or honey.
6️⃣ Pour the creamy lemon dressing over the salad ingredients in the bowl. Toss everything together until well coated.
7️⃣ Cover the salad and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and the broccoli to soften slightly.
