Ingredients :
- 1 lb salmon fillet, skin removed and finely chopped
- 1/2 cup breadcrumbs
- 1 egg, lightly beaten
- 2 tbsp fresh parsley, chopped
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil (for baking)
- For the Avocado Sauce:
- 1 ripe avocado
- 1/4 cup sour cream
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions :
- Preheat oven to 375°F (190°C). In a large bowl, combine chopped salmon, breadcrumbs, egg, parsley, garlic powder, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs and place them on a greased baking sheet. Drizzle with olive oil.
- Bake for 12-15 minutes, or until the meatballs are firm and cooked through.
- While the meatballs are baking, prepare the avocado sauce by blending together avocado, sour cream, lemon juice, garlic, salt, and pepper until smooth.
- Serve the salmon meatballs with a generous drizzle of creamy avocado sauce.
