Alfredo lasagna soup

Ingredients :

  • For the Soup:
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground Italian sausage (or
  • ground beef)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper
  • flakes (optional for some heat)
  • 8-10 lasagna noodles, broken
  • into pieces
  • 1 1/2 cups heavy cream
  • Salt and pepper, to taste
  • For the Alfredo Sauce:
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 1/2 cups grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • For Garnish:
  • Fresh basil or parsley, chopped
    Additional grated Parmesan cheese

Instructions : 

  1. Procedure:
    Cook the Ground Meat:
  2. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, cooking until softened and fragrant, about 3 minutes.
    Add the ground sausage (or beef) to the pot. Cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat if needed.
    Prepare the Soup Base:
  3. Add the diced tomatoes (with juice), chicken broth, basil, oregano, and red pepper flakes (if using) to the pot. Stir everything together.
  4. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
    Cook the Noodles:
  5. Break the lasagna noodles into smaller pieces (about 2-3 inches long) and add them to the soup.
  6. Simmer until the noodles are tender, about 10-12 minutes, stirring occasionally.
    Make the Alfredo Sauce:
  7. While the soup is simmering, melt the butter in a separate saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  8. Stir in the heavy cream and bring to a simmer. Cook for 3-4 minutes until slightly thickened.
  9. Add the Parmesan and mozzarella cheeses, stirring until smooth and creamy.
  10. Season with salt and pepper to taste.
    Combine the Alfredo Sauce with the Soup:
  11. Once the noodles are tender, stir the prepared Alfredo sauce into the soup. Stir gently to combine and let it heat through for another 2-3 minutes. Taste and adjust seasoning if necessary.
    Serve:
  12. Ladle the soup into bowls. Garnish with fresh chopped basil or parsley and a sprinkle of grated Parmesan cheese.
  13. Serve with warm crusty bread or garlic bread for a complete meal.
