Ingredients :
Dough:
- 2 cups whole milk
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1 package active dry yeast
- 4 1/2 cups flour
- 1/2 teaspoon baking powder
- 1 1/8 teaspoon baking soda
- 1 1/2 tablespoons salt
Filling:
- 1 cup melted butter, plus more as needed
- 1/8 cup ground cinnamon
- 1 cup sugar, plus more as needed
Frosting:
- 1 pound powdered sugar
- 1 teaspoon maple extract
- 1/4 cup milk
- 1/8 cup melted butter
- 1/8 cup brewed coffee
- Pinch of salt
Instructions :
- Dough:
- In a saucepan, combine milk, vegetable oil, and 1/2 cup sugar. Scald the mixture (heat until just before boiling).
- Remove from heat and let cool for 45 minutes to 1 hour.
- Once lukewarm, sprinkle in the yeast and let it sit for a minute.
- Add 4 cups of flour and stir. Cover and let rise for at least an hour.
- Add the remaining 1/2 cup flour, baking powder, baking soda, and salt. Stir.
- Option: Cover and refrigerate overnight or up to two days.
Filling:
- On a floured surface, roll the dough into a thin rectangle (approximately 12×15 inches).
- Brush with 1/2 cup melted butter.
- Sprinkle with 1/2 cup sugar and then cinnamon.
Shaping:
- Starting from the wide end, roll the dough tightly into a log.
- Pinch the seam to seal.
- Cut the log into 1-inch slices.
- Place slices in greased baking pans.
- Let rest for 20-30 minutes.
Baking:
- Bake at 375°F (190°C) for 13-17 minutes, or until golden brown.
- For Christmas Morning: Place the pans in the refrigerator overnight to rise slowly. Let them sit at room temperature for 30 minutes before baking.
Frosting:
- Combine powdered sugar, maple extract, milk, melted butter, coffee, and salt in a bowl.
- Stir until smooth and pourable.
- Drizzle generously over warm rolls.
