Absolutely Sinful Cinnamon Rolls!

Ingredients :

  • Dough:

    • 2 cups whole milk
    • 1/2 cup vegetable oil
    • 1/2 cup sugar
    • 1 package active dry yeast
    • 4 1/2 cups flour
    • 1/2 teaspoon baking powder
    • 1 1/8 teaspoon baking soda
    • 1 1/2 tablespoons salt

    Filling:

    • 1 cup melted butter, plus more as needed
    • 1/8 cup ground cinnamon
    • 1 cup sugar, plus more as needed

    Frosting:

    • 1 pound powdered sugar
    • 1 teaspoon maple extract
    • 1/4 cup milk
    • 1/8 cup melted butter
    • 1/8 cup brewed coffee
    • Pinch of salt

Instructions : 

  1. Dough:
      • In a saucepan, combine milk, vegetable oil, and 1/2 cup sugar. Scald the mixture (heat until just before boiling).
      • Remove from heat and let cool for 45 minutes to 1 hour.
      • Once lukewarm, sprinkle in the yeast and let it sit for a minute.
      • Add 4 cups of flour and stir. Cover and let rise for at least an hour.
      • Add the remaining 1/2 cup flour, baking powder, baking soda, and salt. Stir.
      • Option: Cover and refrigerate overnight or up to two days.
    1. Filling:

      • On a floured surface, roll the dough into a thin rectangle (approximately 12×15 inches).
      • Brush with 1/2 cup melted butter.
      • Sprinkle with 1/2 cup sugar and then cinnamon.
    2. Shaping:

      • Starting from the wide end, roll the dough tightly into a log.
      • Pinch the seam to seal.
      • Cut the log into 1-inch slices.
      • Place slices in greased baking pans.
      • Let rest for 20-30 minutes.
    3. Baking:

      • Bake at 375°F (190°C) for 13-17 minutes, or until golden brown.
      • For Christmas Morning: Place the pans in the refrigerator overnight to rise slowly. Let them sit at room temperature for 30 minutes before baking.
    4. Frosting:

      • Combine powdered sugar, maple extract, milk, melted butter, coffee, and salt in a bowl.
      • Stir until smooth and pourable.
      • Drizzle generously over warm rolls.
