- 4 medium potatoes (Yukon Gold or Russet work great)
- 4 cloves of garlic, finely chopped
- 50 g butter, melted
- 1 tsp dried oregano (or more to taste)
- Salt, to taste
- Black pepper, to taste
- Optional garnish: chopped parsley or grated Parmesan
Directions:
- Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper or lightly grease it with a bit of butter or oil.
- Prepare the potatoes: Wash and scrub the potatoes well. You can peel them if you like, but leaving the skin on gives a rustic flavor. Cut each potato into wedges or thick slices.
- Make the garlic butter: In a small bowl, mix the melted butter with the chopped garlic, oregano, salt, and pepper.
- Toss the potatoes: Place the potatoes in a large bowl, pour over the garlic butter, and toss until every piece is well coated.
- Arrange on the tray: Spread the potatoes out on the baking tray in a single layer to ensure even roasting.
- Bake: Roast in the oven for about 35–40 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges. Check for doneness by piercing with a fork—it should slide in easily.
- Serve: Sprinkle with fresh parsley or a little Parmesan if desired, and serve hot!
