Instructions :
- Procedure:
Cook the Ground Meat: - In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, cooking until softened and fragrant, about 3 minutes.
Add the ground sausage (or beef) to the pot. Cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat if needed.
Prepare the Soup Base: - Add the diced tomatoes (with juice), chicken broth, basil, oregano, and red pepper flakes (if using) to the pot. Stir everything together.
- Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
Cook the Noodles: - Break the lasagna noodles into smaller pieces (about 2-3 inches long) and add them to the soup.
- Simmer until the noodles are tender, about 10-12 minutes, stirring occasionally.
Make the Alfredo Sauce: - While the soup is simmering, melt the butter in a separate saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the heavy cream and bring to a simmer. Cook for 3-4 minutes until slightly thickened.
- Add the Parmesan and mozzarella cheeses, stirring until smooth and creamy.
- Season with salt and pepper to taste.
Combine the Alfredo Sauce with the Soup: - Once the noodles are tender, stir the prepared Alfredo sauce into the soup. Stir gently to combine and let it heat through for another 2-3 minutes. Taste and adjust seasoning if necessary.
Serve: - Ladle the soup into bowls. Garnish with fresh chopped basil or parsley and a sprinkle of grated Parmesan cheese.
- Serve with warm crusty bread or garlic bread for a complete meal.
