Heavenly Slow Cooker Beef and Mushroom Stew

Ingredients :

  • 2 lbs beef stew meat, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 2 tbsp tomato paste
  • 1/4 cup flour
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
    Fresh parsley, chopped, for garnish

Instructions : 

  1. Preparation: Season the beef with salt and pepper. Heat olive oil in a skillet over medium-high heat.

     

  2. Cooking: Sear the beef until browned on all sides, then transfer to a slow cooker. Sauté onions and garlic in the same skillet for 2-3 minutes, then add to the slow cooker.
  3. Combine mushrooms, beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary.
  4. Mix well. In a small bowl, create a slurry with flour and water, then stir it into the slow cooker. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is tender.

     

  5. Final touches: Once cooked, garnish with fresh parsley.

     

  6. Serving: Serve over mashed potatoes or egg noodles for a complete meal. Enjoy every bite!
