- Cake:• 2 cups whole wheat pastry flour• 2 cups finely grated carrots• 1/2 cup maple syrup• 1/3 cup coconut oil• 3 eggs• 1/2 cup unsweetened applesauce• 1 tsp vanilla• 2 tsp cinnamon• 1/2 tsp nutmeg• 1/2 cup chopped walnuts• 1/2 cup raisins• 2 tsp baking powder• 1/2 tsp saltGreek Yogurt Frosting:• 2 cups Greek yogurt• 3 tbsp honey• 1 tsp vanilla• Zest of 1 lemon
