Ingredients :
- 1/2 cup self raising flour
- 1/2 cup butter (softened)
- 1/2 cup icing sugar
- 1/2 cup desiccated coconut
- 3 Tbsp milk powder
- 2 Tbsp liquid milk
Instructions :
1. In a large bowl beat the butter and icing sugar until light .
2. Add coconut , flour and powdered milk . Mix to combine the wet and dry ingredients.
Add liquid milk and mix .
*If the dough is a little sticky sprinkle some flour . If it’s too dry add a little liquid milk .
3. Using a spoon or an ice cream scoop ,scoop the dough and roll into small balls .
4 . Roll each dough ball in coconut. Place them in a prepared baking tray. Use a fork to make a pattern .
5. Bake in a preheated oven at 170 Degrees Celsius for 18 minutes or until slightly golden brown.
Double the ingredients if you want more .
