Ingredients :
- 1 zucchini (about 200 g)
- 1 teaspoon salt
- 30 g (3 tablespoons) rolled oats
- 100 g (1 cup) grated cheese (e.g. cheddar or mozzarella)
- 2 eggs
- Black pepper to taste
- 2 tablespoons chopped chives (optional)
Instructions :
- Cut the zucchini into thin slices and sprinkle with salt.
- Let it sit for 10 minutes to remove excess moisture.
- Pat dry thoroughly with a paper towel to prevent it from getting soggy.
- In a bowl, combine the zucchini slices, rolled oats, grated cheese and eggs.
- Season with black pepper and stir well.
- If using, toss with chopped scallions.
- Preheat oven to 180°C (350°F).
- Grease a baking dish or line with parchment paper.
- Transfer mixture to dish and spread evenly.
- Bake for 20 minutes or until top is golden and bake is set.
- Allow baked good to cool slightly before slicing and serving. Enjoy warm or at room temperature.
