Baked Salmon Meatballs with a Tangy Avocado Sauce

Ingredients :

  • 1 lb salmon fillet, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg, lightly beaten
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil (for baking)
  • For the Avocado Sauce:
  • 1 ripe avocado
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions : 

  1. Preheat oven to 375°F (190°C). In a large bowl, combine chopped salmon, breadcrumbs, egg, parsley, garlic powder, paprika, salt, and pepper. Mix until well combined.
  2. Form the mixture into small meatballs and place them on a greased baking sheet. Drizzle with olive oil.
  3. Bake for 12-15 minutes, or until the meatballs are firm and cooked through.
  4. While the meatballs are baking, prepare the avocado sauce by blending together avocado, sour cream, lemon juice, garlic, salt, and pepper until smooth.
  5. Serve the salmon meatballs with a generous drizzle of creamy avocado sauce.
