Taco Stuffed Shells

Ingredients :

  • 1 pound ground beef
  • 1 package taco seasoning mix
  • 1 box jumbo pasta shells
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions :

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick cooking spray.
  2. Cook Pasta Shells: Cook the jumbo pasta shells according to the package instructions. Drain and set aside.
  3. Prepare Ground Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
  4. Season Beef: Add the taco seasoning mix to the ground beef. Stir in the black beans, corn, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and let cool slightly.
  5. Prepare Cheese Mixture: In a bowl, mix together shredded cheddar cheese, sour cream, chopped cilantro, and green onions.
  6. Stuff Shells: Fill each cooked pasta shell with the ground beef mixture. Place the stuffed shells in the prepared baking dish.
  7. Top with Cheese Mixture: Spoon the cheese and sour cream mixture over the stuffed shells, spreading it evenly.
  8. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Serve: Serve hot, garnished with diced tomatoes, sliced jalapeños, or chopped avocado if desired.
