Taco Stuffed Shells

Ingredients :

  • 1 pound ground beef
  • 1 package taco seasoning mix
  • 1 package of jumbo pasta shells
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Cooking spray

Instructions :

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with cooking spray.
  2. Cook the jumbo pasta shells according to the instructions on the package. Drain the pasta and set it aside.
  3. Brown the ground beef in a skillet over medium heat. Drain the excess grease. (source: Ineskohl.info)
  4. Incorporate the taco seasoning mix into the ground beef and mix thoroughly. Add the black beans, corn, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  5. Take the skillet off the heat source and allow it to cool for a few minutes.
  6. In a bowl, mix together the shredded cheddar cheese, sour cream, cilantro, and green onions.
  7. Stuff each cooked jumbo pasta shell with the ground beef mixture, using a spoon or your fingers.
  8. Place the stuffed shells in the baking dish, ensuring a tight fit.
  9. Pour the cheese and sour cream mixture over the top of the stuffed shells, covering them well.
  10. Bake the stuffed shells in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  11. Serve hot and enjoy!
