Sesame Chicken Salad

INGREDIENTS
  • Half a green cabbage, shredded or thinly sliced
  • 3 cups cooked and shredded chicken
  • 3 large carrots, shredded
  • 4 green onions, chopped
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • ⅓ cup slivered almonds
DRESSING
  • 1 orange, zested and juiced
  • 3 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 1/4 cup avocado oil
  • 4 tablespoon rice vinegar
  • 2 teaspoons honey
  • 1-2 teaspoons sriracha
  • 1 teaspoon fresh grated ginger
  • ½ teaspoon garlic powder
  • salt to taste
PREPARATION
  1. In a small bowl, whisk together all dressing ingredients for 1-2 minutes.
  2. In a large bowl, add cabbage, chicken, and carrot. pour dressing over top and toss to combine.
  3. Add green onions, cilantro, mint, and almonds and gently toss again.
  4. Serve right away for the freshest results.
