Ingredients:
- 1/4 cup unsalted butter, melted
- 2 tablespoons sugar
- 1 cup mashed potatoes (about 2 medium potatoes)
- 1/2 cup warm milk
- 2 1/4 teaspoons active dry yeast (1 packet)
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 large egg, beaten (for egg wash)
Instructions:
- In a large mixing bowl, combine warm milk, melted butter, sugar, and yeast.
- Allow it to sit for 5-10 minutes until the yeast activates and becomes foamy.
- Add mashed potatoes to the yeast mixture and mix thoroughly.
- Gradually add flour and salt to the mixture, stirring until a dough forms.
- Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with plastic wrap or a kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Punch down the dough and divide it into equal-sized portions.
- Shape each portion into a ball and place them in a greased baking pan, leaving some space between each roll.
- Cover the rolls and let them rise for another 30-45 minutes, or until doubled in size.
- Preheat your oven to 375°F (190°C).
- Brush the tops of the rolls with beaten egg wash.
