Cajun Shrimp Deviled Eggs

Ingredients:

  • 12 Eggs
  • 24 medium-sized Fresh Shrimp
  • 1 tsp Cooking Oil
  • 1/2 small Lemon
  • 2-3 tbsp Mayonnaise
  • 1/2-1 tbsp Hot Sauce (adjust to taste)
  • 1 tbsp Sweet Relish
  • 1-2 tsp Old Bay Seasoning + 2 tsp (for the shrimp)
  • 1/4 tsp Garlic Powder
  • 2 tbsp Fresh Dill, chopped + 2 tsp (for garnish)
  • Salt and Pepper to taste

Instructions:

Perfect Boiled Eggs:

  1. Place the eggs gently in a shallow pot.
  2. Fill the pot with water, making sure the eggs are fully covered.
  3. Bring the water to a boil, then turn off the heat and cover the pot. Let the eggs sit for 15-20 minutes.

Cajun Egg Filling:

  1. Peel the boiled eggs and slice them in half. Remove the yolks and place them in a medium-sized bowl. Arrange the egg whites on paper towels to dry.
  2. In the bowl with the egg yolks, add mayonnaise, hot sauce, sweet relish, 1-2 tsp Old Bay Seasoning, and garlic powder. Taste after adding each ingredient and adjust the seasoning to your preference.
  3. Mix until the yolk mixture is creamy. Cover and set aside.

Cajun Shrimp:

  1. Heat a medium-sized pan over medium-high heat and add the cooking oil.
  2. Pat the shrimp dry with a paper towel. Sprinkle 2 tsp of Old Bay Seasoning over the shrimp and stir until they are well coated.
  3. Sauté the shrimp until they are fully cooked and slightly charred. Halfway through cooking, add about 1 tsp of lemon juice to the shrimp.

Plating Cajun Shrimp Deviled Eggs:

  1. Scoop the egg yolk mixture evenly into the egg white halves.
  2. Top each filled egg white with one Cajun shrimp.
  3. Garnish with a sprinkle of paprika and fresh dill.
  4. Serve and enjoy!
