Homemade Zebra Cakes

INGREDIENTS:

Yellow Cake
⏺ 15.25 oz yellow cake mix (ditch the box instructions)
⏺ ½ cup unsalted butter, melted
⏺ ¾ cup milk
⏺ 1 teaspoon vanilla extract
⏺ 3 large eggs + 1 extra egg yolk (that’s 3 whole eggs and 1 yolk!)
Creme Filling
⏺ ½ cup unsalted butter, softened
⏺ ¼ teaspoon salt
⏺ 1 tablespoon vanilla extract (clear for a bright white!)
⏺ 3 cups powdered sugar
⏺ 2-3 teaspoons milk (adjust for frosting consistency)
Coating
⏺ 24 ounces white melting wafers OR almond bark (plus a spoonful of vegetable shortening – see notes for melting tips!)
⏺ ¼ cup milk OR semi-sweet chocolate chips (melted, for stripes)

INSTRUCTIONS:

1️⃣ Preheat oven to 350°F (175°C).
2️⃣ In a large bowl, combine cake mix, melted butter, milk, vanilla extract, and eggs. Beat until smooth.
3️⃣ Pour batter into a greased 9×13 inch baking pan and bake for 20-22 minutes, or until a toothpick inserted comes out clean.
4️⃣ While cake cools, prepare the filling. Cream together softened butter, salt, and vanilla extract until light and fluffy. Gradually add powdered sugar and beat until smooth. Add milk, 1 teaspoon at a time, until desired frosting consistency is reached.
5️⃣ Once the cake is cool, cut it into circles using a cookie cutter.
6️⃣ Spread a generous dollop of creme filling on half the cake circles. Top with the remaining cake circles to create little sandwiches.
7️⃣ Time for the zebra stripes! Melt your white chocolate according to package instructions (or see recipe notes). Carefully spread or drizzle melted white chocolate over the cake sandwiches.
8️⃣ Now for the magic! While the white chocolate is still wet, drizzle melted milk chocolate (or melted chocolate chips) to create zebra stripes.
9️⃣ Refrigerate cakes for at least 30 minutes to allow the chocolate to set.
