Ingredients :
- 1 head of cabbage, chopped
- 2 carrots, peeled and diced
- 2 stalks of celery, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 (14.5 oz) can diced tomatoes
- 4 cups vegetable broth
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add onions, garlic, carrots, celery, and bell pepper. Cook until vegetables are slightly softened, about 5 minutes.
3. Stir in the chopped cabbage and cook for another 5 minutes.
4. Add the diced tomatoes, vegetable broth, basil, and oregano. Bring to a boil.
5. Reduce heat to low and simmer for about 30 minutes or until all vegetables are tender.
6. Season with salt and pepper to taste. Serve hot.
