With origins in the classic American poke cake tradition—where cooks would “poke” holes into a baked cake and pour in a sweet liquid to add flavor and softness—this modern twist replaces traditional fillings with a coconut-inspired syrup. This spin-off is perfect for those who adore the combination of chocolate and coconut and enjoy the convenience of using a boxed cake mix.
INGREDIENTS :
- 1 box of chocolate cake mix (and the ingredients called for on the box, usually water, oil, and eggs)
- 1 (14 oz) can of sweetened condensed milk
- 1 (15 oz) can of coconut cream
- 1 (7 oz) package of shredded sweetened coconut
- 1 (12 oz) container of chocolate frosting
- Optional: additional shredded coconut or almond slivers for garnish
INSTRUCTIONS :
- Preheat your oven to the temperature specified on the cake mix box. Typically, this is around 350 degrees Fahrenheit (175 degrees Celsius).
- Prepare the chocolate cake mix according to package directions. Pour the batter into a greased 9×13 inch casserole dish.
- Bake the cake for the time specified on the box, usually between 25-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is still warm, poke holes throughout the cake using the handle of a wooden spoon or a similar instrument.
- In a medium bowl, mix together the sweetened condensed milk and coconut cream. Pour this mixture over the cake, aiming to fill the holes.
- Allow the cake to cool completely, which will enable it to absorb the milk mixture thoroughly.
- Once cooled, spread the shredded sweetened coconut evenly over the top of the cake.
